This everyday oatmeal recipe is super fast, satisfying, and healthy. Top with some chilled coconut whipped cream and whatever nuts, fruits, or seeds you like.
I love how quick and easy this oatmeal recipe is. I make this for breakfast pretty much everyday. This oatmeal recipe is super versatile and filling. You can add in any toppings you enjoy to customize this recipe for your own tastes.
My kids also love this recipe! (even the one that’s going through a rather picky phase) This is my go to cure for they’re spur of the moment “hangry pangs”, and it never lets me down. This also leaves virtually no dishes, so cleanup is super duper easy.
Here I focus on using more natural sweeteners and fats. The coconut whipped cream is super easy if you have a can of coconut cream waiting in the fridge.
This is one of the big reasons why you should keep a few cans of coconut cream in the fridge at all times. The cream must be cold to separate from the liquids and hold a nice, fluffy whip.
It’s totally not necessary to have the coconut whipped cream though for this recipe, it’s just a great touch.

- Dried Cranberries, Rasins, Coconut, Dates, Goji berries
- Blackberries, raspberries, strawberries, blueberries

- Walnuts, Pecans, Peanuts, Pistachios, Macadamias, Cashew
- Nut Butters such as Almond, Cashew, or Peanut
Seeds
- Chia Seeds, Flax Seeds, Hemp Seeds,
Other
- Sweeteners such as Maple Syrup, Agave, Coconut Sugar, or Dates
You can of course add things that are not on this list, these are just some good suggestions that come to mind. I’ve even gotten away with making carrot cake style oatmeal, or adding grated zucchini in. The possibilities are pretty limitless.

Easy Creamy Everyday Oatmeal
Ingredients
Oatmeal
- 2 cups rolled oats
- 3 cups water
- 1 tsp salt
- 1/4 cup coconut sugar
- 1½ tbsp chia seeds
- 1 tsp vanilla bean paste (or extract)
- 1 tsp cinnamon
- 1/3 cup flaked unsweetened coconut (optional)
- 1/2 cup chopped walnuts (optional)
Vanilla Bean Coconut Whipped Cream
- 1 13.6 fl oz can coconut cream (chilled overnight)
- 1 tsp vanilla bean paste (or extract)
- 1½ tbsp agave, coconut sugar, or sweetener of choice
- 1 tsp lemon juice
- 1/4 tsp cream of tartar
Instructions
Oatmeal
- Add all of the ingredients to a small saucepan and heat over medium high. Feel free to add in any other nuts, seeds, or fruits you enjoy. Get creative!
- Cook for 5-10 minutes, or until thickened to desired consistency, stirring constantly.
- Top with coconut whipped cream and serve immediately. Leftovers will keep in the fridge for 5 days. Enjoy!
Vanilla Bean Coconut Whipped Cream
- Scrape the solid cream off of the surface of the coconut milk in the can and use only that cream in the recipe. Save the liquid for later in soups and other recipes. Add all of the ingredients to the bowl of a stand mixer, or a medium bowl to use with a hand mixer.
- Whip on high for about 5 minutes or until lightly stiff peaks form. Serve immediately.

- Add whatever add in’s you’d like to make this recipe your own. Nuts, berries, seeds, fresh or dried fruit, the possibilities are endless!
