Homemade Vegan Ranch

This creamy smooth vegan ranch is made with a cashew cream and freshly picked dill.

Ingredients
  

  • 1 cup raw cashews, soaked
  • 1/2 cup water
  • tbsp white vinegar
  • 1 tbsp lemon juice
  • 1/2 tsp sugar
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp dill leaves, freshly chopped (or 1½ tsp dried dill)

Instructions
 

  • If you haven't already, start by soaking the cashews in water. Ideally, soak them at least 8 hours. If you are in a rush, you can soak the cashews in boiling water for 30 minutes instead.
  • Combine the cashews, 1/2 cup of water, white vinegar, lemon juice, sugar, onion powder, garlic powder, salt, and pepper in a high speed blender. Blend on high for 1 - 2 minutes or until smooth.
  • Pour the contents of the blender out into a bowl. Using a rubber spatula, fold in the freshly chopped dill. Taste the ranch and adjust the seasonings as necessary.

FAQ
What's the difference between using fresh or dried dill? - Fresh dill will have a stronger flavor than dried. If you're not a big fan of dill, it may be best to opt for dry. Otherwise, I love the fresh dill in this ranch! 
Can I substitute with apple cider vinegar? - Of course! This would be a great substitution for white vinegar. 
Is there a way to make this nut free? - Yes, but it would change the recipe quite a bit. (this is essentially a cashew cream dressing) I would opt for a quality nut-free vegan mayo and use that as your base instead.
